SUMMUM SEÑORÍO DE JAIME ROSELL
Made with Arbequina olives, Señorío de Jaime Rosell SUMMUM oil is characterized by its early production.
At the beginning of October, when the olives are still very green, together with our technical staff, a selection of the most suitable olive trees is made to start harvesting. This harvesting is done completely by hand and is immediately transferred to our oil mill, where the oil is cold extracted in situ.
Once extracted, the oil is stored in tanks with inert atmosphere and in cold storage, where it is kept at a constant temperature until bottling, which is only done upon request, until the end of stock.
This early extraction of the oil brings with it the sacrifice of the low yield to be obtained, but it is compensated with the predominant flavor and aroma of freshly cut grass that our early Señorío de Jaime Rosell SUMMUM oil gives off.
Premium extra virgin olive oil, solid yellow with greenish reflections, long lasting and intense, medium density. Intensely fruity, with notes reminiscent of ripe bananas, apples and nuts, with a complex bouquet of rich nuances of greens, cut grass and bark and balsamic notes of aromatic plants, reeds, green nuts and citrus fruits.
Its fresh ripe and green fruit juice flavor is sweet in the mouth, not too bitter and slightly spicy. Smooth and somewhat consistent, long and entertaining thanks to the medium-density aftertaste of ripe, green fruit that lingers on the palate, along with a slight pungency, vaguely reinforced by faint, late spicy notes.
