SUMMUM SEÑORÍO DE JAIME ROSELL
Made from arbequina olives, Summum Señorío de Jaime Rosell is characterized by its early production.
At the beginning of October, when olives are still unripe, we select the most appropriate trees, together with our technical team, and start harvesting.
This early oil extraction entails a low yield, but this sacrifice is by far offset by the taste and predominant aroma of freshly cut grass of our Señorío de Jaime Rosell SUMMUM early oil.
Extra premium virgin olive oil, solid yellow with greenish reflections, lasting and intense, medium density. Intensely fruity, with notes reminiscent of ripe bananas, apples and walnuts, with a complex range of rich green nuances, cut grass and barks, and balsamic notes of aromatic plants, reeds, green walnut and citrus fruits. Its ripe and green fresh fruit juice aroma is sweet in the mouth, not very bitter and slightly pungent. Mild and somewhat firm, long and lingering thanks to the medium density green and ripe fruit aftertaste, lasting on the palate, together with a light pungent sensation, vaguely reinforced by weak and late spicy notes.
