This olive oil is characterized by being the first elaborated during our harvest, as well as a limited edition. In order to elaborate the SUMMUN variety, the fruit of our olive trees is conscientiously harvested at the beginning of October, whereas the customs of our sector is doing this between November and December. Due to the previous fact, the yield of the olive is lower than in the other cases. Before gathering our fruits manually, our experts select the right trees to review they meet all the maturity and purity attributes of the fruit (e.g. the absence of plagues). This traditional and special harvesting method makes our expenses increase greatly, but we only work under the most stringent quality standards of the olive oil industry. Summum: 100 Kilograms of olives- 7 liters of olive oil Maximun: 100 kilograms of olives- 15 liters of olive oil Moreover, due to the fact that the fruit is greener that in the other cases, the quality that this variety has is supreme and the acidity level is 0, 1º (almost 0, 0º, which is the absolute perfection) and all this, together with the particular intense aroma and flavor reminiscent of tomato, fresh grass… Summum is sweet and slightly bitter and spicy and also has medium fruity aroma
