The time between the harvest and pressing of the fruit is reduced to a minimum because our olive oil mill is located next to our farms, where we cultivate conscientiously our olive trees. Due to this fact, we are able to obtain the best quality in our extra virgin olive oil. We use the cold extraction (20º - 22º) to obtain our olive oil and then, the liquid gold extracted is stored in cold rooms, which maintain the same temperature throughout the year, and in tanks without oxygen because we apply the method of inert gasses in order to maintain most of the organoleptic qualities of the olive oil.
